WHY WE LIKE IT - COS was founded in 1980 by Giambattista Cilia, Giusto Occhipinti and Cirino Strano. These three old school friends started out making wines for pleasure and ended up transforming the future of Sicilian wine. TASTING NOTES - The nose shows a hit of clay spice with cranberry, cherry, light earth, and bright minerality. A sleek texture, lean tannins, and bright acidity make for lip-smacking juice, with notes of raspberries & mandarin oranges.
PRODUCTION NOTES - Hand-harvested. Vines average 25 years of age. Spontaneous fermentation on the skins in concrete tanks for 10-15 days with indigenous yeast in amphorae. Aged for six months in amphorae followed by 2-3 months in concrete tanks. Finally three months in the bottle before release.
